CAROB CHIP COOKIES

Makes @ 12-15 good sized cookies

Ingredients:
1/4 C. coconut oil
1/4 C. raw honey
2 tablespoons molasses
1 T. vanilla extract
1/4 C. coconut milk
1/2 tsp. sea salt
2 tablespoon grounded flax seed gel (this is your egg replacement)
1 tsp. arrow-root powder
1 C. whole wheat or spelt flour
¼ cup coconut flour
1/4 C. carob chips
½ tsp coriander powder

Direction:
Preheat oven to 350 degrees F. Whisk together the coconut oil, coconut milk, molasses, flax seed gel and honey. Mix in vanilla extract. In a separate bowl, mix together the dry ingredients: salt, shredded coconut, arrow-root powder, coriander and flour. Add in about 1 cup of the dry ingredients to incorporate into the honey oil mixture. Add in the coconut milk. Add the rest of the dry ingredients. Mix in the chocolate chips.
Important: Only flatten these slightly (the dough will spread out quite a bit in the oven). Space each cookie @ 2" apart. Bake for 30 minutes.

After the cookies are baked you can place some of the carob chips on top for an extra delight as you bite!!!!
