Vegan Ginger Carrot Oatmeal Raisin Cookies

Makes 25 bite-size cookies


 1/2 cups whole wheat pastry flour (or spelt flour) 
 1 cup old-fashioned oats
 1 cup shredded coconut
 1/2 teaspoon sea salt
 1 teaspoon ground coriander
 2 tablespoons ground flax seed
 2 cup shredded carrots
 1/2 cup raisins
 1/2 cup coconut oil
 1/4 cup raw honey
 1 tablespoon molasses
 1 teaspoon fresh grated ginger


Preheat oven to 350Ëš F and line two baking sheets with parchment paper.


In a large bowl stir together the flour, salt, coriander, grounded flax seed powder and oats. Add the carrots, coconut and raisins. In a small bowl use a whisk to combine the honey or maple syrup, cold pressed coconut oil and ginger. Add this to the flour mixture and stir until just combined.


Drop by tablespoonful onto prepared baking sheets. Bake in the oven for 35-40 minutes or until the cookies are golden on top and bottom. Transfer to a wire rack to cool completely.


Enjoy as breakfast or lunch – excellent treat for children!
